How did an Indian spirits group become a single malt pioneer?
John Distilleries, founded in 1996 by Paul P. John, initially specialised in Indian whiskies and brandy for the domestic market – its flagship was the popular "Original Choice". By building a modern single malt distillery on Goa's sunny coast, the company took the step into the international premium market: production began in 2008, followed by the first launches outside India in 2012.
Why does Paul John mature so much faster than Scotch?
Goa's tropical climate significantly speeds up cask maturation – the whisky loses more water than alcohol in the process, so the alcohol content in the cask tends to fall rather than rise, an effect barely seen in Scotland. The distillery uses six-row barley from the Himalayan foothills, which, thanks to its higher protein content, yields a fuller-bodied spirit than the two-row barley typical in Scotland. Distillation takes place in four copper pot stills, complemented by local yeast and Goan spring water.
