A handful of Pedro Ximénez sherry cask-matured malt whisky casks were selected for this bottling. The whisky matured for around five years in ex-bourbon casks and was then matured for a further two years in Pedro Ximénez casks, which lend it the classic PX sweetness of sultanas and raisins.
Paul John is the single malt brand of John Distilleries, founded in 1992 by Paul P. John in Bangalore. The distillery in Cuncolim in Goa began producing the single malt in 2008, and the first international bottlings followed in 2012. The malt is distilled from six-row barley from the Himalayan foothills, which favours a fuller-bodied character.
The result is a creamy-soft malt with distinct notes of sweet barley, butterscotch and soft dried fruit – a whisky that combines the sweetness of PX sherry with the fruit of an Indian malt.
