How did Melbourne's weather become a whisky advantage?
When David Vitale founded the "New World Whisky Distillery" in 2008, he recognised that Melbourne's changeable climate is unusually advantageous for whisky maturation: the rapid temperature swings make the casks expand and contract more, driving the whisky deeper into every fibre of the wood and maturing it faster than in more temperate climates. Since 2015, Diageo has supported the distillery's growth through its Distilled Ventures programme.
Why does Starward rely so consistently on red wine and apera casks?
Instead of classic ex-bourbon or sherry casks, Starward favours casks from the neighbouring Australian wine region – above all red wine and apera casks (Australia's answer to sherry).
