A handful of oloroso sherry cask-matured malt whisky casks were selected for this bottling. The whisky first matured in American bourbon barrels and then received a finish in oloroso sherry casks, which lends it dried fruit and baking spice.
Paul John is the single malt brand of John Distilleries, founded in 1992 by Paul P. John in Bangalore. The distillery in Cuncolim in Goa began producing the single malt in 2008; the first international bottlings followed in 2012. The malt is distilled from six-row barley from the Himalayan foothills, which contains more enzymes than the two-row barley common in Scotland. In the sample it is easy to get to know.
Tasting Notes: What Paul John Select Cask Oloroso Tastes Like
- Nose: Sweet, ripe peach and apricot – in the background traces of molasses and blood orange
- Palate: Soft and sweet at first with strong chocolate notes, then the ripe fruit again; plus nutty chocolate and a hint of fruit cake
- Finish: Long and intense, with dark spices from the oloroso casks, notes of mocha and dark chocolate
