Togouchi

Founded in 1918 in Sakurao, near Hiroshima, Japan, as a sake and shochu distillery, Chugoku Jozo first ventured into whisky production as early as 1938 - but discontinued it in 1989 amid declining demand. In 2003, the company found a creative way back into the world of whisky: rather than distilling itself, it initially imported finished malt whisky from Scotland and grain whisky from Canada to blend and refine under the new Togouchi brand. What's special is the maturation: the casks rest in a 387-metre disused railway tunnel at the foot of Mount Osorakan, where a constant temperature of 14 degrees provides ideal conditions year-round.

Why does Togouchi mature in a railway tunnel?

The 387-metre tunnel near Akiota-Togouchi, dug in the 1970s, maintains a constant temperature of 14 degrees year-round - ideal, stable conditions for cask maturation without any technical climate control.

Is Togouchi really "Japanese" whisky?

Initially, Chugoku Jozo imported finished malt and grain whisky from Scotland and Canada for blending - but the sister Sakurao distillery (since 2018) now also produces its own single malt made entirely in Japan, making Togouchi increasingly "Japanese".

Flavour profile

Taste: Soft and balanced with vanilla, light fruit sweetness and a fine spice, with the cask-finish variants adding sake, beer or rum notes.

Recommended enjoyment: Neat, or as the base for a highball, the classic Japanese whisky-and-soda drink.
