On the slopes of Teide, Spain's highest peak, right in the middle of Tenerife, the Destilería Santa Cruz, founded in 2010 by Diego Rombolá, keeps alive a Canarian tradition that goes far beyond ordinary rum: Ron Miel, or "honey rum". Since 2005, the designation "Ronmiel de Canarias" has been a protected geographical indication requiring the finished product to contain at least 2% real honey. Originally intended as a home remedy for colds, the sweet liqueur has long since become a popular after-dinner drink, often served alongside the bill in Tenerife's restaurants. Alongside the classic honey version, Santa Cruz also produces other rum liqueurs, including a creamy caramel variant.
