Profile: What Makes Paul John Brilliance Special
John Distilleries in Goa, India, produces Brilliance from Indian barley grown at the foot of the Himalayas. The whisky matures for three to five years in ex-bourbon casks and is bottled at 46% ABV. The climate in India makes the alcohol in the casks evaporate extremely quickly, which is why the whisky matures faster than its European and American relatives.
Paul John is the single malt brand of John Distilleries, founded in 1992 by Paul P. John in Bangalore. The distillery in Cuncolim in Goa began producing the single malt in 2008, and the whiskies have been available internationally since 2012. In the sample it is easy to get to know.
Tasting Notes: What Paul John Brilliance Tastes Like
- Nose: Intense nougat aromas, pudding with raisins and orange blossom honey – plenty of vanilla, delicate and fresh; plus honeycomb, freshly baked cookies and butterscotch, underneath a hint of cereal grain and green herbs
- Palate: Barley and demerara sugar, spices, some cinnamon and citrus fruit; honeyed and soft, with baked apple and barley sugar
- Finish: The barley again, plus honey and a gentle spiciness
