Opthimus
After the Cuban Revolution of 1959, the Oliver rum family, descendants of the emigrant Juanillo Oliver, had to leave their homeland and eventually found refuge in Santo Domingo. Only decades later, in 1997, did the family revive their rum tradition in the Dominican Republic with the company Oliver y Oliver - as an independent bottler specialising entirely in artisanal premium rums. Under the brand name Opthimus, the López-Oliver family developed a unique triple maturation process, adapting the traditional Spanish solera method and perfecting it in the warehouses of the rural community of Hato Nuevo.Code: PFINGSTEN26

What's special about Opthimus's maturation process?
Opthimus uses an innovative triple maturation process modelled on the traditional Spanish solera method - barrels of different ages are gradually blended together, producing a particularly smooth, complex character.
Why is Opthimus made in the Dominican Republic instead of Cuba?
The Oliver family had to go into exile after the Cuban Revolution of 1959. Only in 1997 did they found a new operation, Oliver y Oliver, in the Dominican Republic, continuing their generations-old rum tradition.
Flavour profile
Taste: Full-bodied and smooth with ripe fruit, caramel and elegant wood spice, with the cask-finish variants adding port or sherry notes.
