Bimber
The name of the London craft distillery Bimber comes from the Polish word for "moonshine". Founder Dariusz Plazewski honours his Polish roots and his grandfather, who was also a distiller – the distillery was founded in 2015, with its first casks filled in 2016.
Bimber stands for elaborate handcraft: floor-malted barley from a single farm near London, a full week of fermentation, and distillation in classic alembic pot stills. How did Polish "moonshine" heritage become London craft whisky?
Founder Dariusz Plazewski comes from a Polish family that distilled illegally as early as the communist era – his grandfather was also a distiller. After emigrating to London, Plazewski founded Bimber in 2015, named after the Polish word for home-distilled spirit. The first casks were filled on 26 May 2016; the first single malt release, "The First", appeared in September 2019 in a limited run of 1,000 numbered bottles, which sold out within three hours.
What makes Bimber's production so elaborate?
Bimber sources its barley from a single farm near London; the malt is floor-malted separately at Warminster Maltings. Bimber deliberately takes a full week for fermentation, using cooled fermentation vessels for a controlled, multi-layered development of flavour. Distillation takes place in alembic stills made by Hoga, with maturation in casks from the distillery's own cooperage.
