Cotswolds
After 25 years in Europe – eight of them as an investment banker in London – native New Yorker Daniel Szor moved to the Cotswolds in 2011 and turned his dream of an English single malt into reality: in 2014, he founded the region's first full-scale distillery since the 19th century.
Cotswolds stands for English single malt made from locally grown barley and limestone-filtered spring water, matured partly in unusual STR red wine casks. From the Cotswolds Single Malt to the peated Peated Cask, you will find the right bottle for every occasion in our selection.

How did a New York investment banker become an English whisky pioneer?
Daniel Szor spent 25 years in Europe, eight of them as an investment banker in London, before moving to the Cotswolds in 2011. There, in 2014, he founded the Cotswolds Distillery with the aim of producing premium English single malt in the Scottish tradition, but using regional ingredients. The distillery's first own single malt was released in 2017 – making Cotswolds the first full-scale whisky distillery in the region since the 19th century.
What makes the Cotswolds Signature Single Malt distinctive?
At the heart of the house style is maturation in so-called STR casks ("shaved, toasted, re-charred") – red wine casks that have been shaved, re-toasted, and re-charred. This elaborate cask treatment gives the whisky its characteristic profile of vanilla, toffee, and maple syrup. The range is rounded out by special bottlings such as Sherry Cask and Peated Cask.
Overview of the most popular bottlings
1. Cotswolds Single Malt Whisky
The distillery's signature whisky, matured in STR red wine casks.
Taste: Vanilla, toffee, and maple syrup, plus orange blossom honey and ripe summer berries.
Serving suggestion: A good introduction to English single malt.
2. Cotswolds Peated Cask
The peated variant of the house style.
Taste: Smoky, with the characteristic fruity-sweet Cotswolds notes in the background.
Serving suggestion: For anyone seeking peat beyond Scotland.
3. Cotswolds Sherry Cask
Finished in sherry casks, bottled at cask strength.
Taste: Dried fruit and spice with bold sherry depth.
Serving suggestion: For fans of intense, sherry-driven malts.
