Profile: What Makes Paul John Select Cask Oloroso Special
A handful of oloroso sherry cask-matured malt whisky casks were selected for this bottling. The whisky first matured in American bourbon barrels and then received a finish in oloroso sherry casks, which lends it dried fruit and baking spice.
Paul John is the single malt brand of John Distilleries. The company was founded in 1992 by Paul P. John in Bangalore; the first whiskies ran as “National Distilleries” in the low-price segment. In 1995 the company was renamed John Distilleries and launched the blend Original Choice, which quickly became successful. The distillery in Cuncolim in Goa began producing the single malt in 2008; the first international bottlings followed in 2012.
The special feature: the malt is distilled from six-row barley from the Himalayan foothills. Six-row barley contains more enzymes than the two-row barley common in Scotland, which makes starch conversion in the mash more efficient, and its higher protein content usually results in a fuller-bodied spirit.
Tasting Notes: What Paul John Select Cask Oloroso Tastes Like
- Nose: Sweet, ripe peach and apricot – in the background traces of molasses and blood orange
- Palate: Soft and sweet at first with strong chocolate notes, then the ripe fruit again; plus nutty chocolate and a hint of fruit cake
- Finish: Long and intense, with dark spices from the oloroso casks, notes of mocha and dark chocolate
