In the province of Matanzas, the same region that gave rise to famous names like Havana Club, the Cuban state enterprise Cuba Ron Corporación S.A. produces Sao Can, a rum deliberately rooted in the original, unadulterated form of Cuban cane spirit: aguardiente. Unlike Cuba's aged, dark ron añejo styles, Sao Can stays true to the light, young "Ron DOP Cuba" - a protected designation of origin guaranteeing traditional production methods and provenance. Cuba Ron itself, founded in 1993 as the umbrella organisation for the island's state rum distilleries, is also behind more internationally known brands such as Santiago de Cuba.What sets an aguardiente apart from aged rum?
