In the heart of Dublin's historic "Liberties" district – once the most productive whiskey-producing quarter in the world – a working distillery has stood again since 2019: The Dublin Liberties Distillery. Housed in a lovingly restored, roughly 400-year-old building that once served as a mill and tannery, it closes a gap that opened in 1976 when the district's last distillery shut down.

Why was the Liberties' whiskey history so significant?

In the 18th and 19th centuries, Dublin's "Liberties" district was the world's leading centre of whiskey production, home to as many as six major distilleries during Ireland's whiskey golden age. One of them, the Roe Distillery founded by Peter Roe in 1757, reached its peak under Sir Henry Roe in the late 19th century – but ultimately lost out to competition from cheaper Scottish and American distilling methods. In 1976, the district's last remaining distillery closed, ending centuries of whiskey tradition in the Liberties, at least for a time.

How was the revival achieved?

It was only in 2019 that a working distillery returned to the district with The Dublin Liberties Distillery. After two years of construction, it officially opened its doors in February 2019 – housed in a roughly 400-year-old building that had previously served as a mill and tannery. Master distiller Darryl McNally, formerly head distiller at Bushmills, is responsible for the whiskies made here.
