Who taught Jack Daniel how to distil?
Jasper "Jack" Daniel founded his distillery in 1866 at an iron-free spring near Lynchburg, making it America's first officially registered distillery with the US government. Daniel had learned to distil as a boy from Nathan "Nearest" Green, an enslaved and later free man now recognised as America's first known African-American master distiller, who became the distillery's first master distiller after its founding. In 2016, the New York Times brought this long-overlooked story to public attention; Jack Daniel's now officially honours Nathan Green in its tours and with a dedicated exhibit at its visitor centre.
What is the Lincoln County Process – and what does Lincoln County have to do with it?
The distillery sits in what is today Moore County, but belonged to neighbouring Lincoln County until 1871 – hence the process's name. Before being filled into freshly charred white oak casks, the fresh, unaged spirit is filtered through several feet of sugar maple charcoal, produced on site from stacked maple timbers. This "charcoal mellowing" legally and stylistically distinguishes Tennessee whiskey from bourbon and noticeably softens the spirit. Maturation then continues for at least four years.
