Cotswolds Sherry Cask 57,4%vol. 0,7l

Untouched nature, sleepy cottages next to cozy pubs and tea rooms - the Cotswolds region is considered one of the most beautiful in England.
In the middle of this hilly postcard idyll is the Cotswolds Distillery, founded in 2014 in the small village of Shipston-on-Stour as the first full-scale distillery in this region.

Inspired by the breathtaking landscape, the distillery produces natural spirits here - including one of the few English Single Malts.
With the Sherry Cask Single Malt Whisky, the team is presenting a bottling that has been completely matured in former Sherry Casks and will be released annually from now on. As usual for the Cotswolds Distillery, the ingredients for the Englishman with an Andalusian temperament come from local producers: the water comes directly from the village, the Odyssey barley is supplied by farmers based in the Cotswolds.

In keeping with tradition, the distillery only uses grain malted on the malt floor. When mashed, it ferments for over 90 hours - time enough to form the fruit notes typical of Cotswolds Single Malts.
During the distillation in the copper pot stills of the distillery, the pre- and post-runnings are particularly precisely separated from the "heart of the run" in order to preserve the fruity complexity in the raw spirit.

For their Sherry Cask Single Malt Whisky, the Cotswolds Distillery treats the fruity New Make Spirit to a particularly aromatic ripening period.
The accessories: Hogsheads and Butts made from American and Spanish oak - some with the dry Oloroso, some with the sweet Pedro Ximénez sherry.

Carefully married, the result is a tempting single malt, full of notes of dark stone fruits, a hint of roasted almonds and peppery oak spice.
Unadulterated and only minimally reduced to 57.4 percent by volume, the amber-colored Whisky promises pure enjoyment.

Nose: brown sugar and cherry cake with a hint of roasted coffee beans
Taste: full-bodied and intense with dark stone fruits, chocolate and a hint of roasted almonds
Finish: peppery oak spice accompanied by dried fruits
