Profile: What Makes Cotswolds Peated Cask Special
For their cask-strength Cotswolds Peated Cask the English distillers use small 125-litre casks that previously held heavily smoky Islay whisky from Laphroaig. Rebuilt from staves of former bourbon barrels into smaller, cigar-shaped casks, they allow plenty of interaction between wood and whisky. The peat influence is more a “distant fragrant fireplace” than a smoke blast – much gentler than Laphroaig or Ardbeg.
Tasting Notes: What Cotswolds Peated Cask Tastes Like
- Nose: Vanilla with light charcoal and a hint of dried fruit and spice; sweet smoke, pear drops and damp moss
