And what sounds like a boy band from the Highlands is in fact one of the first whiskies with an age statement from Bimber - and thus something of an accolade in the malt universe.

Eight years old, 50% ABV, and limited to 1,090 bottles - Harmony of Eight is not just any whisky, but a statement with proof of age. No more youthful bravado, but finely matured self-confidence. In other words: eight years of cask-aged London pub culture – no fish and chips, but with style.

Founded in 2016, the Bimber Distillery has evolved from an insider tip to a craft star in a very short time. Its recipes: traditional craftsmanship, long fermentation, direct firing – and a keen sense for barrel magic. In this case, the fresh energy of charred bourbon Casks meets the opulent depth of Pedro Ximénez sherry casks. That doesn't just sound like harmony, it is. Almost romantic.

Of course, this bottling is alsouncolored, not chill-filtered, and definitely not for people who drink their whisky with cola.

Tasting Notes: This is how the Bimber 8 year old - Harmony of Eight tastes like

• Nose: Lively and inviting. Fruity aromas from the bourbon casks – such as ripe apples and pears – meet the darker, fuller sweetness of the PX sherry casks. These are joined by vanilla, raisins, and a hint of caramel.
• Palate: Balanced and complex. The fresh fruitiness of the bourbon casks remains noticeable, but is wonderfully complemented by the depth and richness of the sherry maturation. Notes of dried fruit, toffee, and a hint of oak create a round mouthfeel.
• Finish: Medium to long, with pleasant sweetness and gentle spice notes. The two cask types conclude harmoniously – fruity, slightly spicy, and with a warm finish.
