Three friends from Ireland's craft beer scene – Oliver Hughes, Liam LaHart, and Peter Mosley – opened Ireland's first purpose-built, privately financed distillery in over 150 years in 2012, in a former sawmill on Milltown Road near Dingle. The team had previously opened Ireland's first "brewpub" with the Porterhouse Brewing Company, helping to found the country's modern craft beer movement in the process.
The first whiskeys distilled and matured at Dingle were not released until late 2016; in 2017, a single pot still whiskey followed, the first of its kind from an independent Irish distillery in decades. How did craft beer pioneers become a whiskey distillery?

Why did it take until 2016 for the first Dingle whiskey to appear?
Because whiskey must legally mature for at least three years, several years passed after the 2012 founding before the first bottlings distilled and matured at Dingle itself reached the market in late 2016. A significant milestone followed in 2017: Dingle released a single pot still whiskey of its own – the traditionally Irish style made from malted and unmalted barley – the first of its kind from an independent Irish distillery in decades.
