Eden Mill
On the site of a distillery founded in 1810 by William Haig, which later served for decades as a paper mill, Eden Mill was established in 2014 as Scotland's first combined distillery and brewery. The site in Guardbridge, near St Andrews, is part of the University of St Andrews' Eden Campus.
In 2018, Eden Mill ceased beer production and has since focused on award-winning gin and single malt whisky. Following its acquisition by Inverleith LLP in 2021, an entirely new distillery together with a visitor centre opened in 2025. What does a paper mill have to do with whisky?
The Eden Mill site has a chequered history: as early as 1810, William Haig operated a distillery here before whisky production moved to another location in Fife around 1860. The site then became a paper mill, which operated for decades until its closure in 2008. Revival began only in 2012 with brewing; in 2014, whisky and gin distilling was added as a second strand, making Eden Mill Scotland's first combined brewery-and-distillery site.
How has Eden Mill developed since then?
In 2018, the company decided to stop beer production and focus entirely on spirits. In 2021, the investment firm Inverleith LLP acquired a majority stake in Eden Mill. Backed by fresh capital, an entirely new, modern distillery opened in April 2025, followed by a new visitor centre in October 2025. Eden Mill's whiskies are characterised by experimental cask maturation and the use of local ingredients.
