English Whisky
English whisky long lived in the shadow of its larger neighbour Scotland - until 2006, when St. George's Distillery in Norfolk opened as England's first dedicated whisky distillery in around a hundred years, ushering in a renaissance. Since then, a small but ambitious English craft whisky scene has developed: in Greenford near London, the Polish-British couple Dariusz Plazewski and Ewelina Chruszczyk founded Bimber Distillery in 2015 - their first single malt, simply named "The First", sold out within three hours of its 2019 release. Cotswolds, meanwhile, has been distilling on Scottish-style pot stills from regional barley since 2014 and is today one of the most established names in the English whisky landscape.

How is English whisky made?
English whisky shares its climate and raw materials with Scotch but is not bound by its strict regulations. It is usually distilled on copper pot stills following the Scottish model and matured for at least three years.
Where does the name "Bimber" come from?
"Bimber" is Polish for moonshine - a nod to the founders' Polish roots, whose family distilled their own spirits back in the communist era.
