Alle drei Single Still-Rums von 2009 wurden in verschiedenen, uralten, historischen Pot Stills in der Diamond Distillery in Guyana destilliert, die sich dadurch in ihrer besonderen Charakteristik unterscheiden. Dieser markante El Dorado Single Still Versailles 2009 wurde in einem alten Single Wooden Pot Still destilliert, der im 18. Jahrhundert auf der Versailles Plantation in Betrieb war. Das Versailles Anwesen, berühmt für ihren goldenen Rum, lag am Westufer des Demerara Flusses und war damals im Besitz der französischen Familie L’Amirault. Heutzutage kommt dieser einzigartige Pot Still in der Diamond Distillery zum Einsatz. Nach der Destillation reifte dieser Rum zwölf Jahre in ehemaligen Bourbonfässern im tropischen Klima von Guyana, bevor man ihn in einer limitierten Auflage ohne Kältefiltrierung abfüllte. Ausgewogen und harmonisch zelebriert er den wunderbar weichen, schokoladigen Geschmack eines fein gereiften Rums.
