Demerara Distillers haben mit der El Dorado Versailles Special Cask Finish-Serie etwas ganz Besonderes auf den Markt gebracht. Es sind sechs strikt limitierte Abfüllungen, wahre Schätze, die 16 lange Jahre reiften und sich durch unterschiedliche Veredelungen auszeichnen. Dieser einmalige Rum wurde in 2005 in dem seltenen Versailles Single Wooden Pot Still destilliert. Ein Erbstück der Versailles Plantation, die sich am Westufer des Demerara Flusses befindet. Die Versailles Anlage ist die letzte in Betrieb stehende Wooden Single Pot Still Anlage der Welt. Nach der Destillation reifte dieser Rum zunächst acht Jahre in amerikanischen ex Bourbon-Fässern und anschließend weitere acht Jahre für sein Special Cask Finish (was in diesem Fall „Double Ageing“ bedeutet) in feinen französischen Eichenfässern, in denen zuvor trockene Madeira-Weine lagerten. Es handelt sich hierbei um ausgewählte Fässer, die von einem einzigen Weingut der Insel Madeira stammen.
