Smoky Whisky
Peat is essentially nothing more than plant sediment compressed over millennia - and that's exactly what makes it key to the characteristic smoky flavour of many Scotch whiskies. When malted barley is dried over a peat fire, it absorbs smoky aromas that later reappear in the finished whisky. This is especially intense on Islay, where the burnt peat is rich in seaweed and other coastal plants, giving the whiskies of Ardbeg, Laphroaig and Lagavulin their maritime, smoky depth. But every peat region tastes different: peat from the Orkney Islands produces a completely different smoky aroma in Highland Park than Islay peat does. Even beyond Scotland - in Irish Connemara Peated or the Indian Amrut Peated and Paul John Bold - it's usually imported Scottish peated malt that's used.

Why does Islay whisky taste different from Highland Park, even though both use peat?
Peat composition varies significantly by region - Islay peat contains lots of seaweed and coastal plants, producing maritime, smoky notes, while Orkney peat gives Highland Park a subtler, earthier smoky aroma.
Do non-Scottish smoky whiskies use their own peated malt?
