Rum from Guatemala
In 1976, to mark the centenary of the eastern Guatemalan town of Zacapa, the rum brand Ron Zacapa was created - but its decisive distinguishing feature lies not in its name, but in an unusual maturation site: the "House Above the Clouds", a storage facility at 2,300 metres above sea level, one of the highest spirit ageing facilities in the world. There, cooler night temperatures and thinner, lower-oxygen air produce a noticeably gentler, slower maturation than in the tropical lowlands - the exchange between spirit and wood proceeds more gradually, developing colour, texture and aromatic complexity without the accelerated evaporation typical of hot climates. Master blender Lorena Vásquez uses the so-called Sistema Solera, blending rums of different ages and characters through a cascade of casks - including former whisky, sherry, Pedro Ximénez and cognac casks.

Why does Ron Zacapa age at 2,300 metres above sea level?
The cooler, lower-oxygen air at this altitude significantly slows the maturation process - the rum develops colour and complexity over the years without evaporating excessively fast in tropical heat.
What is the Sistema Solera?
A maturation method in which rums of different ages are blended together through a cascade of various casks (including whisky, sherry and cognac casks) - a technique originally derived from Spanish sherry production.
