The Dennery Distillery has existed since 1931, and in the 1970s it established a merged with another distillery and has since been known as St. Lucia Distillers.
The Chairman's Reserve 1931 is a blend of different rum qualities from the distillery's Coffey and Pot stills.
90% of the cuvée consists of molasses rum, 10% are rums made from fresh sugar cane juice.
After the distillation, the Subsequent storage mostly in former bourbon barrels made of American white oak and a smaller part stored in former port wine barrels.
Only the ede lst barrels used for this cuvée.
The barrels used are between 7 and 12 years old.
Colour: medium gold with bronze shimmer
Nose: a very complex bouquet of sweet raisins, leather, spices, tobacco and toasted wood
Palate: rich notes of sultanas, creme caramel, butter and oak
Finish: very complex, initially sweet raisins, later dry, tannic hints of wood - plus light tones of grass and fresh sugar cane, reminiscent of the small proportion of Rhum Agricole in this cuvée
