Cotswolds founder Daniel Szor's favourite casks? STR red wine casks, of course. Founder's Choice matures exclusively in these highly active casks – shaved, toasted and re-charred, a process created by the late whisky consultant Dr Jim Swan. Bottled at cask strength, it is a complex, rounded tribute to Dr Jim Swan.
Tasting Notes: What Cotswolds Founder's Choice Tastes Like
- Nose: Dry hay and cut wood, with dark chocolate and dried figs as well as plums in sweet syrup
- Palate: Warming cereal and toast notes with plenty of fresh red fruit and butterscotch
