Profile: What Makes Cotswolds Founder’s Choice Special
The casks for this bottling come from the distillery’s founder, Daniel Szor: they are re-charred American oak red wine casks – shaved, toasted and re-charred (“STR”), a process created by the late whisky consultant Dr Jim Swan. These highly active casks give the fruity Cotswolds Distillery spirit a rich, intense maturation. As a cask-strength bottling, the English single malt shows toffee, oak and red fruit in a deep colour.
Tasting Notes: What Cotswolds Founder’s Choice Tastes Like
- Nose: Fresh hay and cut wood, plus dark chocolate and dried figs – plums in sweet syrup in the background
- Palate: Warm toasted grain notes, then masses of fresh red fruit and butterscotch
- Finish: Traces of spicy oak, intense tones of dried fruit – above all pleasantly nutty, dry notes
