Where do the banana peels really come from?
A flavour producer that processes bananas for fruit flavourings normally throws the peels away. Discarded instead dries and ferments these peels and steeps them in alcohol for two weeks before blending them with Caribbean rum.
Is Discarded its own distillery?
No - Discarded is a project by William Grant & Sons that refines existing rum stocks with unusual, upcycled ingredients rather than distilling itself. Besides rum, the range also includes a cascara vermouth and a grape-skin vodka.
Flavour profile
Taste: Caribbean and fruity with a pronounced, lightly caramelised banana note, underpinned by the typical molasses character of the base rum.
Recommended enjoyment: Neat, or as a surprising ingredient in a Banana Daiquiri or tiki cocktails.
