Profile: What Makes Discarded Grape Skin Chardonnay Vodka Special
As soon as the grapes are crushed and pressed during winemaking, the remaining fruit, stems and seeds of the harvest are known as “pomace”. Discarded Spirits Co. distils these grape leftovers to form the base of its Chardonnay vodka. The additional flavour complement, in turn, comes from the wine industry: de-alcoholising wine produces two end products, alcohol-free wine and the wine alcohol separated from it. This wine alcohol is usually resold or even destroyed. The finished vodka is clean, with a typically soft, piquant Chardonnay finish.
