Die El Dorado „The Last Casks“ Edition 2000 ist eine eindrucksvolle Hommage an das reiche Erbe der Demerara-Rumkunst. Diese streng limitierte Abfüllung stammt aus der Diamond Coffey Still und reifte anschließend über viele Jahre in ehemaligen Fässern der historischen Uitvlugt-Destillerie, die im Jahr 2000 geschlossen wurde. Die lange tropische Reifung in Ex-Bourbon-Fässern verlieh dem Rum eine dichte Struktur und eine außergewöhnlich intensive Aromatik, wobei bewusst auf Kühlfiltration und Zusätze verzichtet wurde. Im Glas zeigt er sich in einem dunklen Goldton mit warmem Bernsteinschimmer. In der Nase entfaltet sich ein komplexes, vielschichtiges Bouquet aus Honig, Karamell, Vanille, Zimt, Muskatnuss, Lakritz sowie Anklängen von Wal- und Haselnüssen. Am Gaumen präsentiert sich der Rum samtig und tiefgründig mit süßen Noten von Melasse, Toffee, Honig, Vanille und dunklem Karamell, während die Würze elegant im Hintergrund bleibt. Das lange, warme und aromatische Finish rundet dieses kraftvolle Gesamtbild ab und macht diese Edition zu einem Rum von großer Tiefe, Format und Ausdrucksstärke, der besonders Kenner und Liebhaber klassischer Demerara-Stile begeistert.
