Ein weiterer exklusiver Demerara Rum, hergestellt von der Diamond Distillery auf dem Port Mourant Estate in Guyana. Dort wurde diese außergewöhnliche Spirituose im Jahr 1990 in der einzigartigen, historischen doppelten ehemaligen Demerara-Holzbrennblase destilliert, die für ihren unverwechselbaren Stil bekannt ist. Anschließend reifte der Rum viele Jahre unter der tropischen Sonne Guyanas in gebrauchten amerikanischen Eichenholzfässern, bevor er zwischen 2002 und 2004 nach England in die Kellergewölbe von Bristol Spirits überführt wurde. In dem feuchten Klima und bei konstanten Temperaturen lagerte dieser Rum weiter und erhielt sein prägendes Finish in ehemaligen Portweinfässern, wodurch er zusätzliche Tiefe und aromatische Komplexität entwickelte. Die Abfüllung erfolgte im Jahr 2022 ohne Kühlfilterung. Das Ergebnis ist ein Rum mit tiefgoldener Farbe und rötlichen Reflexen, die eindeutig vom Port-Cask-Finish stammen. In der Nase zeigt sich der klassische Port-Mourant-Stil mit komplexen Noten von Anis und getrockneten Früchten. Am Gaumen intensiv und vielschichtig mit leichten Ledertönen, Anis und reifen Fruchtaromen, die in einen langen, kraftvollen und eleganten Abgang übergehen.
