At the heart of this strictly limited bottling lies the legendary Versailles Single Wooden Pot Still. Originally from the historic Versailles Plantation on the west bank of the Demerara River, it is the last operational wooden single pot still in the world. This alone makes it a true rarity—a historic masterpiece that continues to perform reliably after many decades, proving that true classics never go out of style.
This rum was distilled in 2005 at the Diamond Plantation, the current home of Demerara Distillers’ traditional stills. Here, several historic stills from former plantations were brought together and preserved for future generations. Rather than being retired, they continue to demonstrate the capabilities of centuries-old engineering.
Nothing was left to chance during the maturation process, either. The rum initially spent eight years in ex-bourbon American oak casks. This was followed by a further eight years of maturation in French oak casks that had previously held fine Sauternes wine from a single estate in the Bordeaux region. There is a reason this elaborate process is known as "Double Ageing"—it involves double the maturation time, double the effort, and a great deal of patience. As part of the exclusive El Dorado Special Cask Finish series, this bottling is one of only six special editions. It unites Guyana’s long rum-making tradition with historic distillation artistry and exceptional cask maturation.
