This means: The rum comes entirely from a single distillery, is distilled exclusively in traditional pot stills, and is produced without blending spirits from different distilleries. While this has long been the standard for single malt whisky, it is still a relatively rare practice in the world of rum. The Islay Rum Company consistently applies this commitment to quality to its own spirit - combining extensive manual craftsmanship, small batches, and a healthy dose of pioneering spirit.

Distillation takes place in the historic "Old Lemonade Factory" in the port village of Port Ellen. Where lemonade was once produced, operations now center on a classic copper pot still and a double-retort setup - following the authentic Caribbean model. The unusually long fermentation period of 168 hours further demonstrates a preference for careful craftsmanship over speed. After all, a good rum never suffers from being given a little extra time.
