Right at the top of Scotland, where the roads get narrower and the sheep get bolder, lies Thurso – a charming little town that's home not only to Britain's northernmost railway station, but also arguably the country's most patient whisky distillery: Wolfburn.
The story? Founded in 1821, then dormant for over 150 years, Wolfburn celebrated a comeback in 2013 that's something to behold (and drink). And while other distilleries vie for attention with hip designs or curious cask experiments, Wolfburn prefers to stay down-to-earth - but with style.
The new Wolfburn 12 Year Old is now the flagship of the range - the captain with a tweed jacket and pocket compass, so to speak. Matured in ex-bourbon casks and oloroso sherry butts (half each - it has to be fair), this dram spent 12 years in traditional dunnage warehouses. In other words: maximally down-to-earth, maximally relaxed.
No frills, no rush - instead, manual labor, long fermentation, and a distillation so slow that you'd think the stills were meditating in between.
Wolfburn may be small, but their whiskies speak loudly - at numerous competitions, where they regularly win medals.
In short: if you want the real north of Scotland in your glass but don't fancy stormy drama, the Wolfburn 12 Year Old is the perfect choice. A whisky like a Highland stroll - only without the rain.

- Nose: A balanced composition of sweet and floral aromas, accompanied by a subtle hint of peat smoke, which adds additional depth to the fragrance
- Palate: Full-bodied and rich with pronounced depth - honey and candied sugar are prominent, complemented by fine spices - the present sherry sweetness lends warmth and richness to the flavor profile
