Profile: What Makes Fettercairn 12 Year Old Pedro Ximénez Sherry Cask Edition Special
The history of Fettercairn goes back to 1824, when Sir Alexander Ramsay converted a corn mill in the shadow of the Grampian mountains into a whisky distillery. The area was notorious for illicit distilling at the time, and Ramsay is said to have recruited former illicit distillers for his new venture. In 1830 he sold his Fasque Estate, including the distillery, to Sir John Gladstone, father of the future British Prime Minister William Ewart Gladstone; the Gladstone family stayed connected with it until its closure in 1926. Since 1973 the distillery has belonged to Whyte & Mackay.
A special feature of Fettercairn is the cooling of the stills: water is directed down the outside of the copper stills so that only the lightest vapours rise to the condenser.
This 12-year-old single malt whisky matured in former Pedro Ximénez sherry casks. The PX sherry is unmistakable – it brings sweet raisins and a tropical fruitiness to the whisky without losing the weight of the distillery.

- Nose: At first ripe oranges and clementines, behind them sweet raisins – the Pedro Ximénez sherry is unmistakable; plus apricot, peach, plum, raspberry and floral tones of rose, Turkish delight dusted with icing sugar, ginger and orange marmalade on toasted malt loaf
- Palate: Silky and mouth-filling – buttery notes of juicy oranges, plus vanilla and strawberries, tropical fruit is present; apricot jam, cherry, dried mango, honey and a hint of dry oak coated in thin caramel
- Finish: Very fruity with slightly piquant, warming-spicy tones and a touch of dry ginger
