Profile: What Makes Hyde No. 8 Stout Cask Finished Special
A triple-distilled Irish whiskey, finished in Irish stout casks from the Cork-based Cotton Ball Craft Brewery. The bottling is a collaboration between the Cotton Ball Brewing Company in Mayfield, Cork, and Hibernia Distillers (Hyde).
The blend of single grain and single malt is transferred into an ex-bourbon oak cask infused with craft stout, where it matures further for five to six months.
Tasting Notes: What Hyde No. 8 Stout Cask Finished Tastes Like
- Nose: Distinct coffee and caramel – ripe fruit in the background; espresso, dark fruit and spice, plus sweet vanilla and roasted coffee
- Palate: Full-bodied – sweet and malty, now even more caramel; toasted barley, malt and caramel sweetness, a sweet, hoppy biscuit taste with a roasted coffee twist
- Finish: Creamy-soft and long, with vanilla cream and oak
