A triple-distilled Irish whiskey, finished in Irish stout casks from the Cork-based Cotton Ball Craft Brewery. The bottling is a collaboration between the Cotton Ball Brewing Company in Mayfield, Cork, and Hibernia Distillers (Hyde). The sample makes it easy to get to know.
The blend of single grain and single malt is transferred into an ex-bourbon oak cask infused with craft stout, where it matures further for five to six months.
Tasting Notes: What Hyde No. 8 Stout Cask Finished Tastes Like
- Nose: Distinct coffee and caramel – ripe fruit in the background; espresso, dark fruit and spice, plus sweet vanilla and roasted coffee
- Palate: Full-bodied – sweet and malty, now even more caramel; toasted barley, malt and caramel sweetness, a sweet, hoppy biscuit taste with a roasted coffee twist
