This elegant rum from Antigua first matured for five years in former bourbon casks and was then finished for three to six months in oloroso sherry casks from Jerez de la Frontera and Montilla-Moriles. The oloroso casks lend the rum their typical nutty, caramelised character.
Tasting Notes: What English Harbour Sherry Cask Finish Tastes Like
- Nose: Spicy aromas in abundance – distinct cinnamon and cloves, some cardamom and mixed pepper – spicy oak above all; red berries and caramel
- Palate: Again the spices, joined now by caramel and sugar syrup – then turning fruitier with notes of ripe oranges and cherries
- Finish: The spice stays present for a long time, joined by tones of orange marmalade and roasted nuts
