Only 366 individually numbered bottles were filled from this single-cask bottling by Glendalough Distillery, cask no. 2/BY19. The whisky first matured in a first-fill ex-bourbon cask and was then finished in a Grand Cru Burgundy cask that previously held full-bodied Pinot Noir – lending it complexity and depth.
Tasting Notes: What Glendalough Single Cask Burgundy Finish Tastes Like
- Nose: Fruity vanilla at first, then dark berries and lightly spicy aromas of cinnamon and oak
- Palate: Full, soft body with notes of butterscotch and mild honey, plus the berries and spicy tones again – a lightly earthy note above them
- Finish: Long, noticeably spicier with cardamom, aniseed and ground cinnamon bark – raisins, figs and dark chocolate in the background
