This charming drop from the Glenglassaugh Distillery wasn't forgotten in some old wooden Cask, but rather matured exclusively in former 1st-fill Bourbon Casks from the George Dickel Distillery in Tennessee. It's like putting a cowboy hat on a rugged Scotsman - and amazingly, it suits him really well.
EVOLUTION may sound like Darwin at first, but this isn't about apes to humans, it's about whisky to wow. The maturation in these barrels isn't a random whim, but rather a stylish intercultural exchange between American bourbon charm and Scottish distilling art. Tennessee meets Highlands - Yeehaw meets Aye!

Tasting Notes: This is how the Glenglassaugh EVOLUTION tastes like
- Nose: A fresh opening with sweet barley immediately makes you want to take the first sip. Ripe pineapple brings a tropical lightness to the glass, accompanied by creamy vanilla, reminiscent of bourbon past. As the palate progresses, gentle oak aromas and the subtle scent of caramelized pear unfold – almost like a summer fruit platter with a hint of wood fire in the background
- Palate: On the palate, the whisky reveals itself with a distinctly more woody character. The oak asserts itself confidently, but leaves sufficient room for the fruity notes. Green apples provide freshness, while ripe bananas contribute a pleasant sweetness and richness. In the background, the malty barley shimmers again – this time accompanied by a subtle, slightly salty sea breeze, reminiscent of the proximity to the Scottish coast
