Profile: What Makes Caol Ila 18 Year Old Special
Caol Ila’s 18 year old is a classic single malt whisky from the island of Islay. The distillery’s name comes from Gaelic and means “Sound of Islay” – it refers to the strait between Islay and Jura, on which the distillery sits and out over which it looks.
Caol Ila was founded in 1846 by Hector Henderson. The distillery did not have an easy start and passed to Norman Buchanan, owner of the Isle of Jura Distillery, in 1854; in 1863 the Glasgow whisky traders Bulloch Lade & Co took over. In 1927 it was absorbed into DCL, from which Diageo later emerged. In 1972 the old distillery was demolished and a much larger new building with six stills instead of two was erected – since then Caol Ila has been Islay’s largest distillery. Most of the production goes into Johnnie Walker blends; as a single malt, on the other hand, Caol Ila shows its very own clear, smoky character.
The 18 year old is full-bodied and more intense than the younger bottlings: spicy, peaty and full of sea air, with peppery notes and a complex, rounded finish.
Tasting Notes: What Caol Ila 18 Year Old Tastes Like
- Nose: Plenty of smoke – like a wood fire on a beach –, soapy, with aromas of mineral oil and wax, then burnt grilled meat; underneath a fine, elegant layer of peat, seaweed and brine, with lemon and peppermint in the background
- Palate: Sweet at first, then seafood and sea salt, seaweed and damp leather; subtle peat in the background, followed by brine, honey, caramel and chocolate
- Finish: Very long, warming finish with plenty of smoke
