In the far northwest of Ireland, where the Atlantic Ocean regularly tries to push the land a little further west, lies the tranquil town of Ardara. The landscape is more tranquil than what has recently been happening there in the world of whiskey. Work has been underway at the Ardara Distillery since 2020, and spirits will actually be flowing through the facilities from 2022 onwards.
James Doherty is responsible for the whole project, having apparently decided that "boring" should not be an acceptable category for Irish whiskey. His family history does little to bring calm to the proceedings: His grandfather was a legendary, if not always officially licensed, poitín distiller.
One could say: The license to distill came later, but the passion for it came much earlier. The Ardara Cask Strength Single Malt Irish Whiskey, at a proud 58.5% ABV, is something like the house's "no compromises" version. Cask Strength here doesn't just mean a bit more intensity, but rather a clear statement: Dilute it? You can. But you don't have to. It's produced in a distillery that, despite its young age, exudes remarkable confidence. While other houses are still debating branding strategies,
Ardara simply got started – and consistently so. Triple distillation, traditional methods, and a clear focus on character rather than mass appeal aren't marketing here, but everyday practice. With its heavily peated style, Ardara consciously positions itself a bit outside the classic Irish comfort zone.
While many Irish whiskeys are known for their smoothness, this approach is more like the cousin who always tells the loudest stories at family gatherings – whether you asked him to or not. And therein lies the appeal: Ardara isn't trying to please everyone. The bottlings are limited, the approach uncompromising, and the stance quite clear.
In short: This whiskey is less a polite greeting from Ireland and more a confident "We're doing it this way now" – with a view of the coast, the wind in our faces, and absolutely no interest in conforming.

Tasting Notes: This is how the Ardara Cask Strength Single Malt Irish Whiskey tastes like

  • Nose: Intensely smoky with robust peat and distinct campfire ash. Also present are maritime aromas, a salty breeze, and slightly medicinal notes. In the background, dark fruits, oak, and a hint of vanilla from the barrel aging are evident.

  • Palate: Very powerful due to the barrel strength (58.5% ABV). Dominant peat smoke meets spicy wood notes, dark dried fruits, and a subtle sweetness from the cask. Pepper, roasted malt, and a dry, almost oily texture with noticeable intensity are also present.
  • Finish: Long, warming, and distinctly smoky. The peat remains present, accompanied by oak, spices, and a slightly salty note. Dry, powerful, and persistent – ​​with a clean, uncompromising finish.
