Portrait: What makes the Ardara Single Malt Irish Whiskey 2025 Edition special

In the small coastal town of Ardara in northwest Ireland, not only does a fresh Atlantic breeze blow, but for the past few years, a rather distinctive whiskey breeze has also been present. There, the Ardara Distillery was founded, whose story only began in 2020 – yet it already presents itself as if it had at least a century of distilling tradition under its belt.
Behind the project is James Doherty, a man with a rather colorful family history.
His grandfather Frank wasn't a fan of official permits, preferring the "we'll do it ourselves" approach, and distilled the ancient spirit often referred to as the ancestor of whiskey in the Poitín region. Legal gray areas? Family heritage. Ardara takes this heritage seriously – but with modern technology and a clear goal: not to copy tradition, but to develop it further.
The distillery was commissioned in 2022 and operates with a combination of classic pot stills and a rather unusually rigorous triple distillation process.
The whole thing sounds less like an industrial plant and more like an artisanal experimental laboratory with a connection to the North Atlantic weather. The Ardara Single Malt Irish Whiskey 2025 Edition is the result of this philosophy.
Produced in a strictly limited edition of only 7,000 bottles worldwide (600 of which are for Germany), it presents itself confidently without losing itself in mainstream appeal.
Non-chill filtered, uncolored and with a clear connection to regional whiskey history, it deliberately stands apart from the polished, standard world.

Historical references are also readily made here: According to historian Fionnoan O’Connor, the style is reminiscent of regional production methods from the 19th century – a kind of time travel, only without a time machine, but with copper pot stills.

The fact that it is heavily peated is less of a marketing gimmick than a statement. Ardara consciously positions itself as the antithesis to watered-down trends and focuses on character rather than compromise.

In short: This whiskey is not an attempt to please everyone, but rather a confident reminder that Irish whiskey can be different – ​​and sometimes wants to be.

Tasting Notes: This is how the Ardara Single Malt Irish Whiskey 2025 Edition tastes like

  • Nose: Intensely smoky with a pronounced peat character (55 ppm). Also present are maritime aromas, ash, and a slightly medicinal smokiness. In the background, dark fruits from the ex-sherry casks develop, along with vanilla and dry oak from the bourbon cask.
  • Palate: Powerful peat smoke dominates the opening, accompanied by spicy wood notes and a distinct maltiness. These are complemented by dark dried fruits, a touch of sweetness from the sherry influence, and a dry, almost mineral structure. Very complex and angular, with a clear signature of triple distillation.
  • Finish: Long, dry, and intensely smoky. The peat remains present, while oak, spices, and a subtle fruit note slowly fade away. Sustainable, powerful, and clearly characterized by the distinctive house style of the Ardara Distillery.
