The last unicorn? Nonsense - Signatory wouldn't be Signatory if they let such myths hold them back. After the first "Unicorn" bottling caused raised eyebrows and enthusiastic glasses on April 1st, 2022, the (of course, equally serious) sequel has arrived: Ben Nevis 11 Year Old 2014/2026 - Unicorn Edition. And yes, this unicorn was also released exactly on April 1st. Coincidence? Definitely not.

Behind this fabulous dram is the renowned bottler Signatory Vintage – an independent bottler known since the late 1980s for tracking down exceptional single casks and bottling them in their purest form. No gimmicks, no frills – just honest craftsmanship, non-chill filtered and without added coloring. Just the way whisky nerds love it.

The basis for this “unicorn” comes from the traditional Ben Nevis Distillery at the foot of Scotland’s highest mountain. Since 1825, whisky with true Highland character has been produced here - rugged, authentic, and with a history as deeply rooted as the surrounding mountains themselves. A distillery that has never compromised its principles and enjoys cult status precisely for that reason.

This cask was selected by Kirsch Import, who apparently have a penchant for magical creatures and particularly exciting bottlings.

A first-fill Pedro Ximénez sherry butt, matured for 11 years, bottled at a robust 46% ABV – and, of course, strictly limited, as befits a true unicorn. And what can we learn from this? Unicorns may be rare, but sometimes they do return – at least when they come from Scotland and are discovered by the right people.

So: Do ​​you believe in legends? Or even better – simply secure a bottle before it disappears back into the Highland mist.

Tasting Notes: This is how the Unicorn - Ben Nevis 11 year old 2014/2026 1st-fill Pedro Ximénez Sherry Butt Un-Chillfiltered Signatory tastes like

  • Nose: A lively opening like a balmy summer evening in the vineyards of the Rhône – delicate pink, dancing, and a little dreamy. Then: bam, unicorn dust. Glittering, shimmering, unmistakable. And yes, it lingers. The longer you immerse yourself in it, the more this magical note takes over. But this time, there's something in the air… as if a unicorn itself had granted a few wishes. In the background, rose petals whisper, a hint of candied raspberries, a barely perceptible breeze of freshly ironed fairy wings – and again and again, that promising sparkle that assures: Today, no one will be disappointed.
  • Palate: A gummy candy galaxy – and this time truly complete. The reds, as usual, set the tone: strawberry, raspberry, a touch of cherry. But suddenly, they too confidently take center stage: the white gummy bears. Soft, slightly creamy, with that idiosyncratic, hard-to-describe sweetness that one has either ignored for years – or now appreciates anew. Apparently, the unicorn has listened and granted wishes. Everything is there, everything is in balance. Not a single bear is left behind. A harmonious circus of colors and notes that feels surprisingly complete.
  • Finish: A caramelized candied apple, glowing somewhere between a fairground and a fairytale forest. Add to that a gently shimmering veil of unicorn farts that lingers for a long time - almost as if it were blessing every sip again. And finally: a chorus of red and white gummy bears, now confidently and contentedly joining the finale. Wishes granted. All's well that ends well.
