When you think of Scottish whisky, images of misty moors, weather-beaten distillers, and waves crashing dramatically against rocks often come to mind. And then the Kilchoman distillery from the island of Islay comes along and says, in essence: "We can do that too – but with our own farm, lots of manual labor, and a good dose of experimentation."
Kilchoman is no ordinary distillery. As a so-called "farm distillery," it does (almost) everything itself: from growing the barley to bottling. It's roughly equivalent to a baker not only baking bread but also sowing the wheat beforehand – and probably wearing better rubber boots than average.
With the Kilchoman Maury Cask Matured, the distillery once again demonstrates its willingness to break new ground. Instead of relying on classic whisky casks, they opted for complete maturation in 19 French Maury wine casks. A bold idea, as these casks are quite rare in the world of single malt.
One could say: While others are still debating whether to go left or right, Kilchoman is simply building a new road. Behind this decision is none other than Anthony Wills, the distillery's founder, who clearly has a penchant for exciting premieres.
The Maury wine Casks used come from the Roussillon region of southern France and are known for their opulent character - an origin that in itself evokes images of sun, warmth and a little bit of French charm.
The edition itself is strictly limited and is sure to generate discussion – not least because Kilchoman has already demonstrated with previous special bottlings like the Loch Gorm editions how quickly enthusiasm can turn into "unfortunately sold out".
In short: This whisky isn't just another bottle on the shelf, but rather a liquid adventure with a Scottish passport and a French accent. And who knows – perhaps that's exactly the combination we didn't know we needed.
Tasting Notes: This is how the Kilchoman Maury Cask Matured tastes like
- Nose: On the nose, rich aromas of figs, raisins, and dates are immediately apparent, accompanied by a pleasant sweetness. These are joined by hints of salted caramel and fresh orange peel. In the background lies a gentle, soft peat smoke, which lends the whisky a typical maritime, smoky Islay note without being overpowering.
- Palate: On the palate, a complex combination of spicy pipe smoke and dark chocolate unfolds. Underlying this are dense, syrupy notes of molasses, which give the whisky depth. Warming spices round out the flavor profile and create a pleasant balance between sweetness, spice, and smoke.
- Finish: The finish is long and intense, characterized by dried fruit and bitter cocoa notes. Earthy peat smoke lingers, accompanied by a gentle, dry spice that fades slowly, leaving you wanting another sip.
