Take an artist, a farmer, and a good dose of Scottish stubbornness – and you have the perfect foundation for really good cider. Since 2008, Peter Stuart, the creative mind behind the project, and Ian Rennie of Belhaven Fruit Farm have proven that this combination works exceptionally well.
Under the name Thistly Cross, they produce craft cider that is far more than just fermented apple juice. The story begins at Belhaven Fruit Farm in Scotland. There, the apples grow that are later hand-pressed – without any industrial posturing, but with plenty of craftsmanship and passion.
Fermentation is done with champagne yeast, which gives the whole thing a touch of "We could do it differently if we wanted to." Instead of mass-produced goods, you get carefully crafted cider with character. A particularly vibrant chapter in this story is the Thistly Cross Ginger Cider. Here, the classic apple base receives a surprisingly spirited boost from real ginger root. The result is a Scottish sparkling apple cider with 3.4% ABV that shows that restraint is sometimes overrated.
Ginger and apple – it sounds a bit like a tea room, but in reality, it's a little firework display from the Lowlands. Typical of Thistly Cross remains the base of local apples, freshly processed and combined with natural ingredients.
Everything feels pleasantly down-to-earth – after all, it comes from Scotland, where action is better than talk. The Ginger Cider brings a burst of energy to the glass and proves that tradition and a spirit of experimentation go wonderfully together. Today,
