The very authentic 12/12 Pastis de Saint-Tropez is produced in the oldest active distillery in Marseille (founded in 1884), currently run by the Cristal Limiñana family.

First, star anise is carefully distilled in the column still.
This is followed by a series of macerations of fresh figs, orange blossoms, and sweet almonds from the surrounding area, along with various botanicals and spices, such as licorice and vanilla.

Hand-harvested plants from the Bay of St. Tropez, including myrtle and thyme, are added to the mix.
