Founded in 2019, the Holyrood Distillery returns single malt production to Edinburgh after over 100 years. Inspired but not dictated by the past, the craft distillery combines artisanal tradition with bold, new ideas - such as experimenting with malts, fermentation and special casks inspired by Edinburgh's rich brewing heritage.
How the spirit of research affects whisky is no longer just shown by the distillery's “New Makes”: With Arrival, Holyrood presents its first single malt.The Scots remain true to their line . Their whisky range will not be about age statements or consistent flavor profiles, but rather about exploring the flavor spectrum of single malt.
Arrival marks the beginning and matures in a combination from Sherry, Bourbon and Rum casks. A total of 8,188 of the brown bottles in a beer bottle silhouette, designed as a homage to Edinburgh's brewing and glass history, were filled. If you get hold of one of them, you can expect an impressive dram with dried fruits, butterscotch sweetness and ginger spice.
