Portrait: what makes Kilchoman Fino Cask Matured so special.
Kilchoman Fino Cask Matured matured for five years in 20 ex-fino sherry casks that were previously handpicked by the Spanish bodega Jose y Miguel Martin.
The casks were then married together and a total of 15,650 bottles were filled.
Maturation in exFino sherry casks gives the malt minerality, notes of oak and maple syrup, which combine wonderfully with the natural citrus sweetness and the maritime Combining peat smoke from Kilchoman.
Tasting Notes: This is how the Kilchoman Fino Cask Matured tastes
- Nose: Elegant aromas of dry peat smoke, behind which are fruity aromas and the Fino Sherry - toasted oak and lots of peat smoke over everything
- Palate: sweet honey, rich toffee notes and caramel, plus candied fruit and fresh citrus tones - then almond slivers and delicate peat smoke
- Finish: long finish, malty with ripe citrus fruits and the influence of fino sherry - subtle peat smoke and dark chocolate carry the finish
