Maison Dolin in France's Chambéry region has produced vermouth to an unchanged recipe since 1821. The wine content of Dolin vermouth is unusually high compared with other vermouths, with regional herbs added and macerated in the wine. Dolin uses only real sugar for its products. The Chambéry region is the only one in France permitted to carry the Appellation d'Origine Contrôlée seal for vermouth. Best enjoyed well chilled over ice as an aperitif and in classic cocktails (such as the Manhattan).
